It’s true what your mother told you, carrots will help you see in the dark, but so will oranges, kiwis, spinach, peas, nuts, eggs and dairy food. In fact any source of Vitamins A, C, E and lutein, will help to keep healthy cells and tissues in your eye, and prevent cataracts and age related macular-degeneration (AMD).
So make sure your eyes are at their best by tucking into our eye-nourishing and tasty creamy garden vegetable risotto.
CREAMY GARDEN VEGETABLE RISOTTO
Ingredients:
500g Arborio rice
2 shallots, diced finely
2 carrots, peeled and sliced
1 leek, finely sliced
50g peas
100g spinach, sliced
100g soft cheese
100g Parmesan cheese
500ml water
500ml milk
100ml white wine
4 cloves of garlic, crushed
1 large sprig of thyme
Ground black pepper, to taste
Method:
1. In a pan gently cook the vegetables – apart from spinach – until softened but not brown.
2. Add seasoning and water. Cover and bring to the boil, simmer and cook for 20 minutes, and leave to rest. Strain juices and keep for stock.
3. In a hot pan sweat off the shallots and add the rice and wine and gradually reduce. Add stock a little at a time until rice is cooked al dente.
4. Fold in the mascarpone, Parmesan cheese and spinach. Add black pepper to taste and serve.
